These baked strawberries are such a fun and delicious way to use strawberries! Roasting concentrates the strawberry flavor and gives them a yummy jammy texture. This recipe could not be easier to make, and it’s hugely rewarding flavor-wise!

Wondering what to do with roasted strawberries? They taste great on top of Vanilla Ice Cream, and they would be a fun way to put a twist on Strawberry Shortcake. Use them anywhere you would normally use strawberries—I think a roasted strawberry jam could be amazing!

Why This Recipe Works

  • Easy and special. I love it when something simple becomes something special. Baking strawberries turns them into something new and delicious, perfect for any occasion, or just topping Buttermilk Waffles or oatmeal on the weekend.
  • Complement sweet or savory. Naturally I love these sweet strawberries with ice cream or cake, but they can also provide an amazing contrast to savory things like baked brie or whipped feta.

Ingredient Notes

  • Strawberries: Of course our baked strawberries recipe starts with strawberries!
  • Granulated sugar: To help the strawberries caramelize as they roast. You can experiment with another sweetener like honey as well. 
  • Vanilla extract: I love the spike of vanilla with these strawberries. If you’re not a huge vanilla fan, or you want to use these strawberries to accompany something that vanilla doesn’t pair with, you can reduce the amount or leave it out entirely.

How to Bake Strawberries

  1. Prep oven and pan. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Prep strawberries. Wash 1 lb of strawberries, hull them, and cut into quarters or halves. 
  3. Toss strawberries with sugar and vanilla. Add the cut strawberries to your prepared baking pan along with 3 tablespoons of white sugar and 1 teaspoon of vanilla. Toss to combine. 
  4. Bake strawberries. Roast strawberries in the oven for 20-25 minutes, stirring once during the process. Cool to room temperature or enjoy them warm.

Recipe Tips

If you don’t love the strong vanilla flavor, reduce it by half or leave it out entirely. Or for a savory twist, swap vanilla out for balsamic vinegar. 

Experiment with different sweeteners. Honey roasted strawberries could be really yummy, or you could use maple syrup or another liquid sweetener.

Other flavor variations could include roasting strawberries with herbs or other spices. Have fun with it!

Use these strawberries to top oatmeal or yogurt in the morning, or ice cream or cake for a special occasion. Enjoy them on anything you would normally use strawberries for an elegant twist. Baked brie with roasted strawberries or whipped feta would make for a delicious appetizer.

You can easily double or triple this recipe, but I recommend not crowding the baking sheet too much so all the strawberries can roast evenly.

Make Ahead, Storing, and Freezing

Make Ahead: These strawberries will stay good for up to 5 days, so you can make them at the beginning of the week and enjoy them with breakfast every day.

Storing: Store leftover baked strawberries in an airtight container in the fridge for up to five days.

Freezing: Freeze roasted strawberries in a freezer-safe container or zip top bag for up to 3 months. They may become a little more jammy when thawed but will still be delicious.

Baked Strawberries

Ingredients
 

  • 1 lb strawberries - washed, hulled, and cut into halves or quarters
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper. Remove the stems from the strawberries, either cut the strawberries in half or in quarters, whichever you prefer.
  • Place the strawberries on a baking sheet. Sprinkle the sugar over the strawberries followed by the vanilla. Toss to coat.
  • Bake in the oven for 20-25 mintues. Stirring once during the baking process. Cool to room temperature before serving.

Notes

Serving suggestions: can serve over yogurt, overnight oats, angel food cake, ice cream, salad, cottage cheese, or add to frosting and batters. Also really delicious in a strawberry smoothie!
Additional notes: you can always forgo using the sugar and vanilla, this just sweetens them!
Store in an airtight container. Will last in the refrigerator for 7-10 days.
