These copycat Crumbl Cookie Dough Cookies have a rich brown sugar cookie base, an ice cream flavored frosting and are topped with edible cookie dough bites and mini chocolate chips. These cookies are soft and bursting with cookie dough flavor!

Crumbl had me with their classic Crumbl chocolate chip cookie! Since I tried them I’ve been tasting their different cookie flavors and making copycat Crumbl cookie recipes of my favorites.

  • Brown Sugar: This Crumbl cookie base is a brown sugar cookie, so the only sugar this recipe uses is brown sugar.
  • Molasses: In order to bring out the flavor of brown sugar (and to provide more moisture in the cookie), we use molasses. (Brown sugar is different from granulated sugar due to the molasses in the sugar.)
  • Cornstarch: This helps thicken the cookie dough and give the cookie a nice soft and chewy texture.

Step-by-Step Instructions

  1. Make the cookie dough cookies. Beat the butter and sugar for 2-3 mins on medium speed in a stand mixer. Add the molasses, vanilla extract, and eggs and mix until combined.
  2. Add the flour, cornstarch, baking soda, baking powder and salt and mix until just combined. 
  1. Portion the cookie dough into 1/3 cup balls. Place on a parchment-lined baking sheet. Press down on the balls *just slightly* with the palm of your hand.
  2. Bake at 375°F for 8-12 mins or until edges are just set and the centers are still soft but not overly glossy.
  1. Remove from oven and cool on tray for 10 mins. Transfer to wire rack to cool completely.

  1. Make the ice cream frosting. Whip the butter until creamy and light in color. Add the powdered sugar 1 cup at a time until it’s incorporated. Add the vanilla and melted ice cream. Beat until smooth, light and airy. Add more powdered sugar or more ice cream to get your desired consistency.

  1. Frost the cookies once they are cooled. Top with a few mini chocolate chips and a small handful of cookie dough bites. Enjoy!

Recipe Tips

Chilling the cookie dough will keep the cookies from spreading as much in the oven.

Crumbl advertises that the cookie dough cookies are chilled and the frosting is put on top of the chilled cookie. Doing the same will make it taste even more like the real deal.

Using ice cream does make a difference in the flavor of the frosting so I wouldn’t recommend skipping or substituting that ingredient.

Storing and Freezing

Store the finished cookies in an airtight container at room temperature for 4-5 hours. Due to the ice cream in the frosting, store in an airtight container in the fridge after that. They will stay good in the fridge for 3-4 days.

If you want to freeze the cookies, I recommend freezing the dough and not the baked cookies. Form the dough into cookie dough balls and flash freeze on a cookie sheet in the freezer for 20 minutes for the cookie dough to set. Then transfer to an airtight container or Ziplock bag and freeze in the freezer for 1-2 months. Remove the cookies from the freezer and bake as directed. Your bake time will probably increase a few minutes since they are baking from frozen, so keep an eye on them.

Crumbl doesn’t list all their cookie flavors on its website. However, the weekly menu is listed on the website. Crumbl have new cookie flavors every week!

Does Crumbl repeat flavors?

Yes. Their classic Crumbl chocolate chip cookie is a frequent menu item. Additional flavors will also find their way back into the menu, but not very often! Crumbl does a great job at bringing new cookie flavors to its menu.

Ingredients
 

Cookie Dough Cookies

  • 1 cup unsalted butter - softened to room temperature
  • 1 3/4 cups dark brown sugar - packed, can also use light brown sugar (I used dark)
  • 1 teaspoon molasses
  • 2 eggs - at room temperature
  • 2 teaspoons vanilla extract
  • 3 1/4 cup all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon salt

Ice Cream Frosting

  • 12 tablespoons butter - salted or unsalted, if using salted leave out the pinch of salt in the frosting
  • 3 1/2 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • pinch salt
  • 3 tablespoons cookie dough ice cream - melted but still cold, or vanilla ice cream
