This healthy and refreshing avocado chicken salad comes together in less than 10 minutes! With lots of protein and flavor, this is a recipe you will turn to when in a pinch!
3cupscooked chicken shredded or cubed (about 2 large chicken breasts)
2-3largeavocadoscut into bite sized pieces
1cupfrozen cornthawed, or canned corn drained and rinsed
5ozbaconcooked and chopped
2green onionsthinly sliced
2tablespoonsfresh dillchopped
Lemon Dressing
3tablespoonsfresh lemon juice
2tablespoonsolive oil
1 1/2teaspoonskosher salt
1/4teaspoonblack pepper
Instructions
In a large bowl add the chicken, avocados, corn, cooked bacon, green onions, and dill. Toss everything to combine.
To make the dressing, add all ingredients to a medium bowl and whisk to combine.
Pour dressing over the salad and toss to coat. Serve immediately plain, on bread for a sandwich, on a bed of lettuce.
Notes
Feel free to use canned chicken, just make sure it is well drained!I noted 2-3 avocados... we like to use 3 because we LOVE avocado. But 2 is fine as well. This recipe will make 4 main course servings, but 6-8 if serving this as a side.
