These Crumbl Cookie Dough Cookies are decadent, sweet, and so unique! A sweet brown sugar cookie is topped with an ice cream inspired frosting and garnished with mini chocolate chips and edible cookie dough bites.
Preheat oven to 375°F. Line a baking sheet with parchment paper, set aside.
In a stand mixer bowl fitted with the paddle attachment beat butter and sugar for 2-3 mins on medium speed. Add molasses, vanilla extract, and eggs and mix until combined.
Add flour, cornstarch, baking soda, baking powder and salt and mix until just combined.
Portion dough into 1/3 cup balls. Place on parchment lined baking sheet. Press down on the balls *just slightly* with the palm of your hand.
Bake for 8-12 mins or until edges are just set and centers and still soft but not overly glossy. Remove from oven and cool on tray for 10 mins. Transfer to wire rack to cool completely.
Ice Cream Frosting
Whip butter until nice and creamy. Add the powdered sugar 1 cup at a time until it’s incorporated. Add vanilla and melted ice cream. Beat until smooth and light and airy. Add more powdered sugar or more ice cream to get your desired consistency.
Assembly
Frost cooled cookies. Top with a few mini chocolate chips and a small handful of cookie dough bites. Enjoy!
