Monster Cookie Protein Balls

Monster Cookie Protein Balls taste just like the famous chewy monster cookies but with a healthy twist! These are portioned into bite sized balls for easy on-the-go snacks!

  • Add all of the ingredients to a medium bowl. Use a spoon to mix until evenly combined. 
  • Use a small cookie scoop, I used a 2 tsp sized scoop and got 22 balls total. You can also use your hands to portion the dough into small balls. Place the balls on a wax paper or parchment lined plate. Chill in the refrigerator for 20 minutes before placing them in a Ziploc bag. These protein balls don’t have to be stored in the fridge, but they hold up better that way (less sticky and last longer). 

Notes

Make Ahead: These protein cookie dough balls last for several days, so you can make them at the beginning of the week and have a snack ready to go all week—if they last that long!
Storing: Store leftover monster cookie balls in an airtight container in the fridge for up to a week.
Freezing: Yes, monster cookie protein balls can be frozen! Once they’ve chilled in the fridge and are no longer sticky, you can put them in a freezer-safe container or freezer bag and keep them in the freezer for up to 2 months. Eat them frozen, or let them thaw on the counter for 10-15 minutes before enjoying.
