Peanut Butter Pretzel Bites

Peanut Butter Pretzel Bites feature a sweet peanut butter filling sandwiched between two crunchy pretzels then dipped in chocolate and topped with flaky sea salt. It's the perfect sweet treat to satisfy your sweet and salty taste buds!

Ingredients

  • 1/2 cup creamy peanut butter
  • 2 tablespoons unsalted butter softened
  • 3/4 cup powdered sugar
  • 2 tablespoons brown sugar packed
  • 64 mini pretzels can use twists or square "snaps" pretzels (you may need more or less pretzels...)
  • 3/4 cup chocolate chips (milk or semi-sweet)
  • sea salt for topping

Instructions

  • Add the peanut butter and butter to a medium bowl. Use an electric mixer to mix until smooth. Add the powdered sugar and brown sugar and mix until blended (mixture will be thick). 
  • Using a very small cookie scoop (I use a mini cookie scoop) portion the peanut butter mixture into 1” size balls. 
  • Place each ball between 2 pretzels and gently press together. Refrigerate for 1 hour or until mostly firm.
  • Line a baking sheet with parchment paper or wax paper. 
  • Melt the chocolate in a microwave safe bowl at half power, stirring every 30 seconds, until fully melted. 
  • Dip each chilled pretzel sandwich in the melted chocolate to cover half. 
  • Place on the parchment lined baking sheet, sprinkle with flaky sea salt, and let sit until set, about 20-30 minutes. Enjoy!

Notes

Store in an airtight container in the fridge for up to 1 week.
