2-Ingredient Pumpkin Muffins
These 2-ingredients pumpkin muffins are easy to make and are moist and delicious. I love a spice pumpkin muffin and using spice cake mix and pumpkin puree makes such delicious muffins that you’ll love having this simple pumpkin recipe on your go-to list.
I’m a sucker for delicious fall recipes and pumpkin is one of the best ingredients for fall. Why This Recipe Works
- Only 2 ingredients. Craving a pumpkin dessert but missing a few ingredients for that complex treat? Bake these pumpkin cake mix muffins instead! These are so simple and easy to make — you can whip them up in no time.
- Not a lot of kitchen equipment needed. I only used a hand mixer, bowl, muffin liners and a muffin pan. But you can easily use a wooden spoon and spray the muffin pan and nix the muffin liners to make the prep even simpler.
- Easily customizable. Add chopped nuts, chocolate chips or even a pumpkin spice glaze on top!
Ingredients
- Spice Cake Mix: Any brand of this works great. Using a cake mix for the muffins makes these muffins come out tasty and fluffy!
- Pumpkin Puree: This is different than pumpkin pie filling.
Step-by-Step Instructions
- Line a muffin tin with liners or spray the tin with nonstick cooking spray.
- In a large bowl using a hand mixer, mix the spice cake mix with the pumpkin puree until combined. (You can use a wooden spoon or spatula but takes a bit longer to get it well mixed).
- Portion the batter into the muffin tins to be a little over ¾ full and bake at 350°F for 16-20 minutes. Or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Remove from the oven and let cool in the pan for 5 minutes then transfer to a wire rack to cool completely.
Recipe Tips
Don’t add any of the ingredients asked for on the spice cake box. Remember, it’s just the cake mix and the pumpkin puree we need!
Make these into cupcakes by adding some cream cheese frosting on top!
Make cream cheese pumpkin muffins by microwaving some cream cheese until it is very soft and dollop a spoon of cream cheese on top of the batter in the muffin tins. Using a toothpick, swirl the cream cheese around.
Add a spiced crumb topping to the muffins if you’d like by using a bit of flour, pumpkin pie spice, butter and brown sugar to make a crumble mixture. Spoon onto the batter in the muffin tins and pat the crumb into the batter a bit.
You can use a different cake mix such as yellow cake mix or carrot cake (just don’t add the carrots). Because those cake mixes don’t have spices add a teaspoon or 2 of pumpkin pie spice to the batter.

Typically cake box mixes will have either baking soda or baking powder — or both — in them which helps the cake rise and get fluffy. So we are set for these muffins since we are using a boxed cake mix.

How long would you bake in mini muffin tins? Would like to make for a group at our Senior Center.

Can you use gluten free cake mix for this???

I am about to run to the store to get the spiced cake mix and breakfast is on. I have done similar recipes but always adding the cake box ingredients as well entirely better results with brownies. Thanks for sharing your recipe, I will let you know… though I am positive it will turn out deliciously.
