S’more Rice Krispie Treats are made with a mixture of Rice Krispie and Golden Grahams cereal to provide that s’mores element — plus a layer of melty chocolate and the gooey melted marshmallows will convince you that this summer campfire treat just got upgraded!  

Once you get the classic Rice Krispie Treats nailed down, there are endless possibilities with this fun cereal treat. Give it a color boost with my Fruity Pebble Rice Krispie Treats or amp up the flavor with my Salted Brown Butter Rice Krispie Treats! Plus, you can add a simple mix-in like I did in my M&M Rice Krispie Treats.

Why This Recipe Works

  • S’mores Rice Krispie Treats with Golden Grahams. Using the Golden Grahams cereal will give us that graham cracker flavor and texture — really making these Rice Krispie Treats taste just like a s’mores! 
  • Melty chocolate layer. We layer a bit of the s’mores Rice Krispies and then add a layer of Hershey’s chocolate pieces, followed by s’more of the mixture (haha see what I did there?). This will give us melty chocolate inside! Just like a s’mores. 

Ingredient Notes

  • Unsalted Butter: I prefer using unsalted butter because then I can control the amount of salt in the recipe. 
  • Mini Marshmallows: Using mini marshmallows is your best bet. If you use large marshmallows, the pan will have to be on the heat for longer to melt the larger mallows. This will create a tougher texture in the marshmallows mixture than if you used mini. 
  • Kosher Salt: Kosher salt is a coarser texture than table salt, so be sure to know the substitutions if a recipe calls or one or the other. If a recipe calls for Kosher salt, use 1/4 teaspoon less of table salt per teaspoon of salt. If a recipe calls for table salt, use 1/4 teaspoon more of Kosher salt per teaspoon. 
  • Golden Grahams: Using golden grahams gives us that s’mores Rice Krispies vibe because we are mimicking the graham crackers from s’mores treats. 
  • Rice Krispies: Wouldn’t be Rice Krispie Treats without the Rice Krispies cereal! 
  • Hershey’s Chocolate Bars: We add a layer of the Hershey bars in between the smore Rice Krispie Treats mixture so we get some of that melted chocolate inside AND on top. 

Step-by-Step Instructions

  1. Melt butter and marshmallows. Line an 8×8 inch square pan with foil, then spray with nonstick cooking spray. Then, in a large pot, melt the butter over medium-low heat (err on the low heat side). Once the butter is melted, add 8 cups of marshmallows. Stir while melting. 
  2. Add vanilla and salt. Once the marshmallows are just melted (see image 2), add in 1 tsp vanilla extract and 1 tsp kosher salt. Stir to combine. Then remove from heat.
  3. Add the cereal. Add in 3 cups Golden Grahams cereal and 3 cups Rice Krispie cereal. Mix until completely coated in the marshmallow mixture.

  1. Add the remaining marshmallows. Add 2 cups of mini marshmallows and mix.
  2. Place half the mixture in the pan. Place half of the s’more Rice Krispie Treats mixture into the prepared pan and GENTLY spread it to fill the pan. Add the Hershey chocolate squares to gently cover the top of the mixture.

  1. Spoon the rest of the s’more Rice Krispie Treats mixture on top. Place the rest of the cereal mixture on top and GENTLY spread the mixture to cover. Top with remaining chocolate pieces, a few Golden Grahams cereal pieces and some extra mini marshmallows. Let the gooey Rice Krispie Treats sit for 30 minutes then slice and serve. Enjoy!

Recipe Tips

Do NOT press the Golden Graham Rice Krispie Treats mixture into the pan. Pressing it in compacts the mixture and will instantly make the treats hard. You don’t want to press it in at all. Just GENTLY spread the mixture to cover the pan. No pressing at all. 

Feel free to add more chocolate in the middle layer if you’d like. 

Using mini marshmallows is going to give you much better results. This is because the mixture won’t have to be on the heat for as long since the marshmallows are smaller. This will keep the mixture much softer as overcooking it can create a tough texture. 

Adding the 2 cups mini marshmallows at the end will give you gooey pockets of the marshmallow throughout the s’mores Rice Krispies, which will in turn make the treats softer. 

If you don’t have a Hershey’s bar, I would recommend using milk chocolate chips or chocolate chunks. 

If you want more of a chocolate flavor throughout, you can use cocoa Krispies instead of Rice Krispies. 

I like adding extra marshmallows on top, along with extra chocolate pieces and Golden Grahams for that s’mores look. 

Letting the s’mores sit for a little bit will help them set and cool off before cutting them. Use a sharp knife to cut them. 

Be sure to generously spray your aluminum foil with nonstick spray so the squares are easier to remove. 

Make Ahead, Storing, and Freezing

These s’more Rice Krispie Treats come together so quickly, that I wouldn’t do any make ahead preparations. 

Store in an airtight container or ziplock bag with the air pressed out. Store at room temperature. Do NOT store in the fridge. 

I recommend reheating a square of the s’mores Rice Krispie Treats in the microwave for just a few seconds prior to eating them to just help them return to that gooey treat again. 

If you want to freeze this sweet treat, cut it into squares then wrap them in plastic wrap and then aluminum foil. Store in the freezer for up to 2 months. Remove to thaw, then warm in the microwave.

Recipe FAQs

Can you make Rice Krispie Treats with large marshmallows?

Yes you can. But it is much easier to do it with mini marshmallows because you can get more of an accurate measurement for the mallows that way. 

Can you double Rice Krispie Treat recipe?

Yes feel free to double this S’mores Rice Krispie Treats with Golden Grahams recipe and just use a 9×13 inch pan instead. 

Do you put Rice Krispie Treats in the fridge?

No! If you do, the treats will harden substantially. Just store them at room temperature. 

Can I use marshmallow fluff to make Rice Krispie Treats?

You technically can, but you won’t get the same texture. Marshmallows have gelatin in them, giving them that solid shape. Marshmallow fluff has egg whites, keeping the texture gooey. You won’t get the same kind of consistency in the Rice Krispies, but you technically can still use that as a substitute.

S’more Rice Krispie Treats

These S'more Rice Krispie Treats are seriously THE best!!! Golden Grahams and Rice Krispies cereal are mixed together with a gooey marshmallow mixture then topped with chocolate pieces.

Ingredients
 

  • 6 tablespoons unsalted butter
  • 10 cup mini marshmallows - divided, plus a small handful for topping
  • 1 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 3 cups Golden Grahams cereal - plus a small handful for topping
  • 3 cups Rice Krispie cereal
  • 4 Hershey's chocolate bars - broken up into pieces

Instructions
 

  • Line an 8×8 inch square pan with foil, spray with cooking spray and set aside.
  • In a large pot over medium-low to low heat, melt the butter and 8 cups of the marshmallows. Once the marshmallows have just melted, stir in the 1 teaspoon of kosher salt and 1 teaspoon vanilla extract.
  • Remove the pot from the heat, stir in the 3 cups of Rice Krispies cereal and 3 cups of Golden Grahams cereal. Mix until the cereal is completely coated in the marshmallow mixture.
  • Stir in the remaining 2 cups of mini marshmallows.
  • Spoon half of the cereal mixture into the prepared pan and distribute half of the chocolate pieces overtop. Spoon the remaining cereal mixture into the pan, pressing down just slightly (you don't want to compress the treats too much otherwise they'll be really hard and dense). Top with the remaining chocolate and sprinkle a few Golden graham cereal pieces and a small handful of marshmallows overtop.
  • Let set for 30 minutes-60 minutes, then slice and serve.

Notes

Store in an airtight container at room temperature. Reheat in the microwave for a few seconds to return to a gooey texture. Enjoy!
